First off, I hope I posted this in the correct location. If not, feel free to move this.
Anyway, I have spoken with a lot of people at these events over the last 6 months who have mentioned wanting to bring the meet into the shade/down a level as the summer heats up. Any possibility of doing this? I think the meet will shrink somewhat if we don't do it now that it has grown larger.

Idk, sure if we met from noon until 2PM, it would be better, but at 8:30-10:30AM, I don't see it doing any good. We have decent shade in the summer for the first little bit anyway and I don't think it would work well with the crowds we've been having (and hopefully keep adding to). Plus photos and general visibility would suffer, I'd think it would lose way more than it would gain doing that.

I second this ^ - there is plenty of shade early on and the top deck is much more open (fewer columns/structure). There is a covered section to park in on the top deck, if the sun becomes outright unbearable. I personally enjoy the "open-air" feel that the top deck brings. We've been on most every other level and the top has been the best fit so far!

Even though I have not been yet a later time would be nice.

A later time would nullify the "Coffee" portion of the meet! LOL
Getting it over with before lunch leaves attendees with plenty of time for family and errands (wrenching/garage time) for the remainder of the weekend...

^Yes. I don't enjoy waking up so early, but when I get home from the meet and see that it's not even 12 yet, it feels good because there's lots of time left in the day. I don't have any problems with the current operation.

The traditional Cars and Coffee dictates an earlier, rather than later start/stop. It is good for a morning coffee, BS session, and on to the days activities. Casual, social, and off you go! I also don't think locating it under the deck is a good idea. You want some openness. The only thing, as this grows, we'll likely need more space. The only other one I've been to, Irvine, Ca, was in a huge office space parking lot. The Mazda building if I remember correctly. So, Saturday morning it's not in use. They were overflowing, but still out in the open. Matter of fact, those who were just spectating parked in the adjacent parking deck. We may outgrow the top of the parking deck some day, but the solution won't likely be more floors.

We may outgrow the top of the parking deck some day, but the solution won't likely be more floors. One of the best car shows I've been to was in a parking structure. Now granted it was a "show" and not a "meet", and every level of the deck was filled... But nonetheless, it created a very interesting feel. What would be wrong with expanding to multiple floors? We're already spilling down the ramp...

I'm not against it just making an observation. Would definitely be nontraditional. As a pasty white dude, I could get into a car meet/show with no sun. I'm already getting some forehead burn on our early Saturday mornings. :-(
